LEGUMES: AWORLD TO DISCOVER FAKE NEWS The web is a mine of information which is often difficult to navigate: very often fake news based on hearsay and old wives’ tales is found along with reliable information. Fake news has always existed and science can help distinguish fact from fiction. “Canned legumes are less nutritious than dried, fresh or frozen legumes.” IT’S NOT TRUE! Canned legumes are an excellent solution for who is in a hurry and has little time for cooking. They remain a good source of protein, fibre and starch on a par with dried, fresh or frozen legumes. Remember: read the label and choose products with less salt or no added sugar, rinse them well before eating and don’t add any more salt during their preparation! THEY SAY THAT LEGUMES AND THE ENVIRONMENT In recent years, there has been an increase in the production of legumes. This is due to the rediscovery of the beneficial effects of the Mediterranean Diet and a greater sensitivity to the protection of the environment . The production, distribution and consumption of food leaves a mark, a real footprint on the planet. By following the Mediterranean Diet and eating some foods less often than others we can reduce this footprint. Legumes can help make this footprint less “deep” as their production has a lower impact on the environment than protein-rich foods from animals.
