LEGUMES: AWORLD TO DISCOVER We have already seen that legumes and cereals can help create balanced dishes: they contain protein, starch, fibre, and many vitamins and minerals. TRY THIS RECIPE! THE RECIPE Boiled white potatoes Fresh peas Fresh broad beans Spinach Celery stick Freshly chopped rosemary Grated Parmesan cheese Extra virgin olive oil Fresh garlic Black pepper Salt 600 g 200 g 160 g 160 g 200 g to taste 40 g 40 g 4 cloves to taste to taste* GRATINATED ROSEMARY POTATO CROQUETTES ACCOMPANIED BY A SPRING PEA AND BEAN SALAD INGREDIENTS FOR 4 PEOPLE 20 MINUTES + COOKING TIME METHOD 1 | Boil and peel the potatoes. Place the potatoes in a bowl and mash. Add the chopped rosemary and season with salt and pepper, then mix. Using your hands make croquettes and place them in the fridge for about 10 minutes; 2 | Meanwhile, sauté the garlic in a non-stick pan with olive oil. Add the peas and shelled broad beans and cook the legumes for about 10 minutes over low heat to keep their crunchy consistency. Leave to cool; Do you like experimenting with new flavours?
