DISCOVERING SEAFOOD PRODUCTS Seafood products are a large family, let’s see what belongs here: • fish , i.e. aquatic animals with fins and gills. These include sea fish (e.g. sea bream or sea bass), freshwater fish (e.g. trout) and fish living in both types of water (e.g. salmon); • molluscs which are animals with a soft body. Among the edible molluscs are those without external shells (e.g. octopus, squid and cuttlefish), others with a single shell (e.g. sea snails) and those protected by a double shell (e.g. mussels, clams and oysters); • crustaceans are characterized by the presence of a rigid but articulated external structure, that covers the body.
