NUTRITIONAL QUALITY …Vitamin D is essential for bone health and for many other vital functions. Although it is important to introduce it through food, our body is able to produce most of the vitamin D it needs and activate it through exposure to the sun. DID YOU KNOW THAT… Which nutritional properties do seafood products have? They are in the protein-rich food group ( including meat, eggs, dairy products, and legumes) that must be alternated at mealtimes for a healthy and balanced diet. In particular, fish and seafood products are: • a source of high-quality proteins which are more easily digestible than that from land-dwelling animals; • rich in Omega-3 , especially oily fish (e.g. sardines, herring, anchovies, skipjack, mackerel, etc.). To learn about Omega-3, read Prof. Ripley’s explanation; • rich in numerous vitamins , especially those of the B group . Oily fish are also a source of vitamin D ; • a source of iodine and selenium , especially fish and molluscs. Fish, especially sardines, are also a source of calcium . Seafood products have a good iron content, although it is less absorbable by our body than that from meat. Bivalve molluscs, like mussels, have a very high iron content, but it is only partially usable by our body; • foods suitable for who follows a low saturated fat diet. Omega-3 are polyunsaturated fatty acids which are “essential” for our body: i.e. indispensable substances which must be introduced through the diet because the body is unable to “manufacture” them. Omega-3 help prevent various chronic diseases: they have an anti-inflammatory effect, and help reduce cholesterol and triglycerides in the blood (which, if in excess, are harmful to the heart).
